More than 3000 hectares of vineyards belonging to 900 different producers, more than 150 thousands hectolitres of wine and 26 labels. These are the numbers of the Cantine Paolini from Marsala, in the province of Trapani. It was born in 1970 and now it has decided to point on quality. The president of the wine company, Gaspare Baiata announced that Cantine Paolini will take part in Vinitaly 2010, in the Concours Mondial of Brussels and in the selections of the first festival of Sicilian wines,
“Our structure is the result of a group of farmers”, explained the cellar’s owners “we are aware that we need quality and in order to obtain good results we must be supported by agronomists and oenologists”. So, working on the production and transformation of grapes into wine, we sometimes obtain elite products.
The operations of wine transformation are lead by specialized personnel though a series of innovative wine plants”, they underlined, “refining is then brought forward first in small baths and then in precious wood barrels”. These wines manage to convey all the scents and warmth of the territory from where they come.
A territory with a long tradition. Just think that in ancient Greece, Marsala was famous for its port and its “strong” wine. The Romans also used wine casing and they added cooked must. During the 1700s the Marsala wine was produced for the first time, thanks to a merchant from Liverpool, John Woodhouse, who noted the similarities between this wine and Porto. So he decided to transport some barrels on his ships, adding eau de vie in order not to damage the wine. This episode made the town well-known all around the world and the local wine road is dedicated to this particular product.
But now Marsala is a tourist attraction, not only for its long wine tradition but also for its salt mines, with original mills, and the view of the Stagnone, a small archipelago composed of four islands, Schola, Isola Grande, Santa Maria and Mozia, that in the past were connected to the land by a submerged road built by the Romans, now visible only with the low tide.
The vineyards of the Cantine Paolini are located in this territory, where the grapes “are genuine and in good health”, thanks also to excellent weather conditions. Amongst the new wines, the Frappato, made with grapes that, in the province of Ragusa, are used in a blend with the Nero D’Avola to produce the Cerasuolo di Vittoria. The cellar decided to increase the value to this vine producing a fresh wine which is appreciated by consumers.
